Day 27: Meal Planning

Epimetheus and I have been very planny today. We’ve been up to the usual Christmas hijinks and are plowing our way through the laundry. Naturally, we feel like superheroes.

We’ve also just finished our meal plan for this week. Because I like bragging about food I have that you don’t, I shall post it here. We tend to focus on dinners, making recipes that result in four servings. Then we take the leftovers for lunch the next day.

 

Sunday – Lemony Linguine with garlic bread and salad

 

Monday – Aftrican Peanut Soup and Naan

 

Tuesday - Chicken with Rosemary Sauce on brown rice with steamed veggies

 

Wednesday – North African Chickpea and Vegetable Tagine

 

Thursday – Slow-Cooked Pork Roast with Sauerkraut & Apples and steamed veggies on the side

 

Friday – Leftover City, baby!

    I used to do great with the meal planning, but I’ve fallen off the wagon.

    We do leftovers for lunch, too. Pretty much every day. It’s frugal and simple.
