Day 27: Meal Planning

This is a very cool image I found online. I notice the lower corner has been blurred out. I wish I knew to whom I should be attributing this photo.
Epimetheus and I have been very planny today. We’ve been up to the usual Christmas hijinks and are plowing our way through the laundry. Naturally, we feel like superheroes.
We’ve also just finished our meal plan for this week. Because I like bragging about food I have that you don’t, I shall post it here. We tend to focus on dinners, making recipes that result in four servings. Then we take the leftovers for lunch the next day.
Sunday – Lemony Linguine with garlic bread and salad
Monday – Aftrican Peanut Soup and Naan
Tuesday - Chicken with Rosemary Sauce on brown rice with steamed veggies
Wednesday – North African Chickpea and Vegetable Tagine
Thursday – Slow-Cooked Pork Roast with Sauerkraut & Apples and steamed veggies on the side
Friday – Leftover City, baby!

Trying to make a better me 30 days at a time.

This is what I have to work with.

As of today, my favourite weekday meal strategy is to get ideas from your blog! Yum!
I’m glad I’ve inspired you! If you’re interested in recipes, I’m happy to share!!
I found this website I thought I should share with you. Her recipes list the points plus value on them, which is pretty awesome.
Keep up the good work.

I used to do great with the meal planning, but I’ve fallen off the wagon.
We do leftovers for lunch, too. Pretty much every day. It’s frugal and simple.
